- The 21st Century Fluencies are process skills that we all need, and there is as much benefit in cultivating them within yourself as within your classroom.

- Information Fluency is the ability to unconsciously and intuitively interpret information in all forms and formats in order to extract the essential knowledge, authenticate it, and perceive its meaning and significance.
- It is about using innovative design to add value to the function of a product though its form.
- Media Fluency.
- the ability to look analytically at any communication to interpret the real message, and evaluate the efficacy of the chosen medium.
- to create original communications by aligning the message and audience though the most appropriate and effective medium.
- Collaboration Fluency is team working proficiency that has reached the unconscious ability to work cooperatively with virtual and real partners in an online environment to solve problems and create original products.

A Guide to Gluten-Free Baking - Gluten Free Girl and the Chef
- We also like ground chia seeds and flaxseeds in place of xanthan gum. In fact, these days, we grind up chia seeds and flaxseeds, combine them with psyllium husks in a jar, and pinch in a bit of this combination when we bake.
- Oh, and if you want to make some of our older recipes, before we edit them all to be in grams and without the gums, simply replace any xanthan or guar gum you see with an equal measurement of psyllium, ground chia, or ground flaxseed.
-
Look at your grandmother’s recipe. Whenever it calls for 1 cup of gluten flour (or just, flour) substitute 140 grams of your favorite gluten-free all-purpose flour mix.
That’s it.
Let me make it easier for you.
1 cup = 140 grams
1 1/2 cups = 210 grams
2 cups = 280 grams
2 1/2 cups = 350 grams
3 cups = 420 grams
